TasteAtlas Lists 11 Indian Dishes in Top Pancakes: Masala dosa Leads the Flavorful Charge

The recent release of TasteAtlas’s April edition of the Top 100 Pancakes in the World highlights eleven Indian dishes, showcasing their prominence alongside international favourites. Among the entries, various types of dosa have made significant rankings, emphasising India’s culinary diversity. This recognition is not just about the dishes themselves but also the cultural context and techniques that define them.

Among the Indian dishes, masala dosa has secured the sixth position, while dosa from Tamil Nadu follows closely at the fifteenth spot. Paper dosa ranks thirty-fifth, and appam from Kerala is at the sixtieth position. Other notable entries include pesara dosa from Andhra Pradesh, uttapam from Tamil Nadu, and neer dosa from Karnataka, all of which illustrate the breadth of South Indian cuisine. The list also includes malpua at eighty-five, kallapam from Kerala at ninety-five, rava dosa at ninety-six, and pitha from Odisha at ninety-eight.

This blend of regional dishes highlights not just flavour but also culinary methods involving fermentation and the use of traditional Indian spices. For example, the batter for dosa is meticulously fermented overnight to achieve its characteristic tangy flavour. The preparation requires skill to form perfect circles with crispy edges and soft centres, underscoring the artistry behind the dishes.

Indian pancakes differ significantly in their accompaniments and regional variations. While global preferences often include maple syrup, Indian cuisine traditionally involves sambar and various chutneys. Dosa and uttapam are staples that transcend regional boundaries, being enjoyed across South India. Appam, although predominantly linked to Kerala and Tamil Nadu, is also appreciated in other states. Interestingly, pitha is popular not just in Odisha but also in neighbouring areas like West Bengal and Assam, each area adding its distinct flavour to the dish. Malpua, which features prominently in both festivals and weddings, showcases the regional adaptations further amplifying its cultural significance.

The TasteAtlas list, which is based on a compilation of 8,811 ratings, aims to promote local culinary excellence and foster pride in traditional foods. This initiative encourages exploration and appreciation of dishes that may be unfamiliar. The list extends beyond pancakes to include a variety of crepes, wraps, and other preparations that reflect global food trends.

Leading the TasteAtlas list is Kartupeu pankukas from Latvia, a traditional potato pancake served with sour cream. French varieties including crepes and Nutella crepes dominate the top spots as well, illustrating their global appeal. The list expands culinary horizons, revealing how different cultures interpret the concept of pancakes.

In previous releases, India has been highlighted in various categories, with cities like Mumbai, Delhi, Hyderabad, and Lucknow gaining recognition. As Indian cuisine continues to be celebrated on the global stage, it paves the way for broader acceptance and understanding of traditional dishes.
