The preparation begins with thoroughly cleaning the chicken and draining excess water. Onions, ginger, garlic, and red chillies are then ground into a smooth paste, while potatoes are cut into medium-sized chunks. These simple, fresh ingredients set the stage for a dish rich in local flavour.

Cooking Instructions for Assamese Chicken Curry

The cooking process begins by heating mustard oil in a heavy-bottomed pan until it reaches the smoking point, after which the heat is reduced slightly. The potato pieces are added along with a pinch of turmeric and some salt, frying until they achieve a light golden colour. Once fried, the potatoes are set aside to be added later in the cooking process.

In the same oil, the prepared onion, ginger, garlic, and dried chilli paste is cooked until the raw aroma dissipates and the mixture becomes fragrant. The chicken pieces are then introduced to the pan, being mixed until they are well coated in the masala. The dish is seasoned with salt and black pepper, followed by the inclusion of the fried potatoes. Sufficient hot water is poured in to cover the chicken and potatoes, and after adding lemon juice, the pan is covered for medium heat cooking until the chicken is tender and potatoes are cooked through.

Once cooking is complete, the dish is finished off with freshly chopped coriander leaves for garnish. This provides a vibrant touch to the curry, making it ready for serving. Assamese chicken curry is best enjoyed while hot, accompanied by steaming rice, ensuring a simple yet hearty meal.
