Hansal Mehta Collaborates with Vijay Subramaniam for AI-Driven Culinary Series ‘Khana Dil Se’

Collective Studios has joined forces with True Story Films, co-founded by acclaimed filmmaker Hansal Mehta and producer Sahil Saigal, to unveil a new project titled Khana Dil Se: An AI Journey Through India’s Kitchen. The first teaser for the series showcases a unique exploration of India’s rich culinary heritage, utilizing artificial intelligence as a storytelling tool.

A Return to Culinary Roots

For Hansal Mehta, this project signifies a return to the food domain where he initially gained recognition. In the early 1990s, he created the influential cookery show Khana Khazana, which made Chef Sanjeev Kapoor a household name and revolutionized India’s perception of culinary programming. Now, nearly thirty years later, Mehta is re-entering the culinary scene with AI as his partner in innovation.

Expert Guidance from Culinary Consultant

Joining Mehta on this venture is prominent culinary expert Shamsher Ahmed, who has been designated as the subject matter expert and culinary consultant for the series. With extensive experience in Indian regional cuisines, Ahmed’s involvement is expected to provide authenticity and depth as the series delves into various culinary traditions across India.

A Cultural Exploration of Food

Khana Dil Se is designed as a cultural deep dive into India’s diverse kitchens, connecting migration, memory, and identity through various recipes passed down through generations. A distinguishing feature of the series is its innovative use of artificial intelligence, not only as a creative tool but also as a partner in recounting culinary histories, tracing influences, and examining how dishes have evolved over time within different communities.

In discussing the essence of the show, Hansal Mehta stated, “Food embodies memory. When you prepare a dish from another culture, you engage with a part of someone’s life. Recipes encapsulate stories of land, migration, and personal histories. They are among humanity’s most enduring cultural documents, surviving where many other aspects of heritage may fade away. With Khana Dil Se, we aim to utilize every possible tool, including AI, to uncover these stories before they fade into obscurity.”

Producer Sahil Saigal remarked, “Khana Dil Se allows us to examine what food television could become with AI influencing the process—not as a substitute for human narratives, but as a means to delve deeper into those narratives. Many culinary traditions in India remain undocumented, and this project seeks to bring those stories to light.”

Vijay Subramaniam, Founder and Group CEO of Collective Artists Network, emphasized the potential for storytelling to evolve alongside technological advancements. He noted, “India’s culinary traditions are some of the richest cultural archives globally, yet numerous stories remain untold.
