The CSR Journal Magazine

The recent pop-up event in Bengaluru, organised by Meghalaya Tourism in collaboration with Seeti Movement, transported diners to the enchanting hills of Shillong. Upon entering the venue at Tijouri, Radisson Blu Atria, guests were greeted by a beautifully curated space adorned with Meghalayan crafts and greenery. The atmosphere was enhanced by traditional woven baskets and brassware, all set against vibrant mustard-and-maroon checked table settings.

This pop-up was designed to evoke the charm of a refined Meghalayan restaurant, where culture, history, and hospitality converge. The energy in the room was palpable, drawing a diverse crowd of food bloggers, chefs, entrepreneurs, and journalists, all united by a shared passion for regional Indian cuisine.

Among the guests was Priyadarshini Raje Scindia, co-founder of Seeti Movement, who brought an air of elegance and grace to the gathering. Despite her busy schedule as a host, she engaged warmly with attendees, sharing insights into her vision for promoting regional Indian food culture.

Engaging Conversations and Culinary Connections

The evening fostered a sense of community, as guests exchanged stories and experiences related to food. Many attendees were keen to document the dishes, capturing the essence of each course while discussing the local and international dining landscape. Connections were made, and familiar faces from Bengaluru’s culinary scene added to the feeling of camaraderie.

As the night progressed, chef Sid Mewara joined the table, sharing anecdotes and laughter, further enriching the dining experience. The intimate setting allowed for personal interactions that elevated the meal beyond a standard tasting event.

Chefs Reuben Sooting, Tanisha Phanbuh, and Adonijah Lyngdoh from Meghalaya engaged with diners throughout the evening, explaining the origins and preparation methods of each dish. This interaction provided valuable insights into the unique ingredients and cooking techniques that define Meghalayan cuisine.

Exploration of a Ten-Course Meghalayan Feast

The highlight of the evening was the meticulously crafted ten-course meal, showcasing the diversity and richness of Meghalayan flavours. Each dish was thoughtfully designed, with a focus on vegetarian interpretations that surprised and delighted even the most dedicated meat-eaters present.

Among the standout dishes was a black sesame and tree tomato tart, which opened the meal with its rich, earthy flavours. Following this, a banana blossom dish inspired by traditional Garo cooking techniques offered a comforting and aromatic experience. The menu celebrated seasonal ingredients, featuring a refreshing salad of pomelo and mustard leaves that highlighted the vibrant produce of Meghalaya.

Other notable courses included delicate mushroom dumplings served with chilli oil and a unique dish featuring fish mint, which introduced diners to a herb that is often misunderstood. The meal concluded with a series of desserts that showcased the region’s indigenous ingredients, leaving guests with a lasting impression of the culinary potential of Meghalaya.

Throughout the evening, Priyadarshini Raje Scindia articulated the mission behind the Seeti Movement, which aims to elevate Indian cuisine by tracing ingredients back to their roots and exploring the cultural narratives surrounding them. This initiative seeks to create an environment that inspires culinary innovation while fostering a deeper appreciation for the diversity of Indian food.

As the night came to a close, attendees departed with not only the memories of a remarkable meal but also a renewed interest in the culinary traditions of Northeast India. The Seeti Movement will continue its journey with pop-up events planned across several cities, further promoting the rich heritage of Indian cuisine.
